Fez, the oldest imperial city in Morocco is classified as a UNESCO world heritage thanks to its many historical and architectural treasures. Throughout history, it has always been considered as the cultural capital of the country, and its medina, which in addition to being the largest in Morocco, is also the most authentic, with its earthen clay walls, its zellige ceramic fountains and its numerous mosaics. Tourists and local inhabitants come here for its souks, where one can find legendary Moroccan crafts including superb blue and white ceramics, pottery, leather goods and the popular slippers known as “babouches” in a wide range of colors. It’s also the opportunity to discover the typical gastronomy of the region, largely influenced by Andalusian traditions. One of the specialties is a lightly sweetened flaky pastry garnished with pigeon flesh and almonds and, and which goes by the name of pastilla. Finally, in the heart of the medina, we find some of Fez’s most beautiful monuments like Karouine University with its Arab-Andalusian architecture, the Bou Inania merdersa and its marble courtyard, or the zaouïa of Moulay Idriss, founder of the city.
