Saint Barthelémy’s reputation as a dream destination with the highest quality hotels is famous throughout the world. Less is known however, about the island being a veritable nature reserve. The inhabitants are particularly concerned with the protection of the flora and fauna around them.
One side of St. Barth (as the island is familiarly called), is especially rich in plants with all sorts of exotic names including gaïac, flamboyant orange, alpinias, balisiers and orchids. This vegetation often conceals some of the very special local fauna. With a bit of luck, one might be able to observe an iguana or a green tortoise or even a luth turtle. Birds reign supreme here, notably the island’s symbol, the pelican. Also present are great herons, hummingbirds, kingfishers, and frigate birds. The ocean depths are also heavily frequented especially since fishing is forbidden in a number of areas.
In the heart of the Côte Sauvage (Wild Coast), the Toiny’s fifteen villa-suites, located on an immense stretch of lush vegetation, blend in perfectly with this natural environment while at the same time, providing unequalled modern comfort.
Each suite follows the model of old Antilles type houses. A Caribbean atmosphere is created by the use of four dominant colors: hibiscus red, gaïac mauve, almond green and Caribbean blue. The Junior Suite, with its private swimming pool, its huge canopy bed and its living area separated from the sleeping quarters is an invitation to tranquility. The Villa Suite is available in a one or three bedroom version for groups of friends or family vacationers. The bedrooms have authentic colonial beds, and the bathrooms are spacious and bright with open showers and bathtubs.
The villas’ doors face the infinity pool and have an uninterrupted view of the anse and the sea. An extra but not insignificant detail: the bread, warm and fresh out of the oven, is served in the guest’s room every morning!
After an initiation to diving to discover the ocean depths or a lesson in surfing, surf boarding or kite surfing, the Gaïac restaurant is definitely the place to go. Chef Stephane Mazieres has successfully combined the quintessence of French cuisine with the exotic flavors and aromas of the Caribbean.
A recently opened organic greenhouse has succeeded, against all odds in this very salty earth, in providing the hotel with spices and vegetables. The restaurant also makes maximum use of the local fish market every Tuesday for the pleasure of its guests as well as offering its famous Sunday brunch.
For total relaxation, the Case Serenity Spa offers a wide range of treatments in a space rich in plant life. Treatments using exotic oils are a specialty and definitely worth discovering. The Toiny, facing the Caribbean Sea, is a truly unique site.
The waves breaking against the rocks have created magnificent natural basins, where swimming is possible. Visitors can ask to be taken to these magical sites of which many are located at Toiny or at Petit Cul-de-Sac.
